Stuffed Mushrooms


  • 100g crumbled feta cheese
  • 1 small onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1/2 cup chopped ham
  • 1/4 cup chopped parsley
  • 1 cup wholemeal breadcrumbs
  • 1/2 cup EasiYo Natural Yogurt
  • salt and freshly ground pepper
  • 12 portabello mushrooms
  • olive oil for drizzling


In a bowl combine the first eight ingredients and mix well.

Clean the mushrooms by wiping them with absorbent paper towels, then place skin-down on a baking tray.

Spoon a little of the mixture onto each mushroom and spread so it forms an even layer.

Drizzle a little oil over each.

Place under a hot grill for about 10 minutes or until the mushrooms soften and the topping turns golden and is starting to bubble.

Serve immediately.
