Strawberry Muffin Ice Cream Sandwich

Celebrate summer with strawberry muffin ice cream sandwiches! The perfect treat for a hot summers day.

 

Ingredients

  • 2 cups plain flour
  • ¾ cup caster sugar
  • ½ tsp baking soda
  • 2 tsp baking powder
  • 2 eggs
  • ½ cup rice bran oil
  • 1 cup EasiYo Greek Style Unsweetened Yogurt*
  • 1 tsp vanilla essence
  • 250g ripe strawberries, diced

Method

  1. Preheat oven to 180°C and line a muffin tray with papers.
  2. In a large bowl combine the flour, sugar, baking soda and baking powder and whisk together.
  3. In a separate bowl whisk the eggs, oil, yogurt and vanilla together until well combined.
  4. Spoon out evenly into the prepared muffin tray and bake for 15-20 minutes or until the tops are golden and spring back when gently pressed.
  5. Remove from oven and allow to cool.
  6. Cut in half and sandwich frozen yogurt or ice cream

 Notes:

  • Dust with icing sugar if desired
  • You can substitute any berries or diced ripe stone fruit like apricots, peaches or plums
  • *Flavoured EasiYo Yogurts work great in this recipe too for even more fruit flavour
