This blueberry protein smoothie bowl will give you the start you need in the morning.
Preheat oven to 200° C and line a large tray with baking paper.
Place carrots on the tray, drizzle over olive oil and season with salt and pepper. Toss well and roast for 15-20 minutes.
Meanwhile, combine all tahini yogurt ingredients (except the dukkah if using), stir well, season to taste and set aside.
Remove tray of carrots from oven and drizzle over honey, sprinkle with thyme and toss well.
Place back in oven to roast for a further 10 minutes.
Remove from oven and serve roasted carrots with a drizzle of the tahini yogurt and a sprinkle of dukkah.
