Fruity Yogurt Slice
Easy afternoon tea is sorted! EasiYo Fruity yogurt slice requires minimal effort for maximum flavour. Trust us, you’ll be coming back for seconds.
Ingredients
Base
- 125g butter, softened
- 1 cup (120g) plain flour
- 1 cup (80g) rolled oats
- ½ cup (100g) caster sugar
Filling
- 125g cream cheese
- ½ cup (125ml) EasiYo Summer Fruits or Greek Style Passionfruit Yogurt
- 1 egg

⅓ cup (65g) caster sugar
- 2 Tbsp lemon juice
- Selection of fresh fruit: berries, peaches, apricots etc
Method
- Preheat the oven to 180°C and line a 25cm x 18cm slice tin with baking paper
- To make the base, put all the base ingredients into a food processor and pulse until the mixture just starts to clump together.
- Set aside ⅓ of the base mix (for the topping) and pour the remaining ⅔ on the tin, and lightly press
- Bake for around 18 minutes until it browns lightly around the edges.
- While the base is cooking, prepare the filling by putting cream cheese, sugar & egg into the processor and whizz until smooth.
- Add the yogurt & lemon juice and whizz again until smooth. (We used EasiYo Greek Style Passionfruit)
- Pour filling over the cooked base & top with fresh sliced fruit & berries.
- Sprinkle over the reserved crumble and bake slice for another 20mins until just set.
- Set aside to cool and refrigerate until ready to serve.
- Remove from tin, cut into pieces, and enjoy with a side of yogurt and fresh berries.
